Ember: 6" Hand-Forged Chef Knife, W-2 Steel

Ember is a one-of-a-kind chef knife, forged by hand and built to be used every day.

The blade is W-2 high-carbon steel, known for taking a keen edge and being easy to bring back on a stone. It's differentially heat treated, so the edge is hardened while the spine stays softer and tougher. That process leaves a visible hamon, the cloudy line running along the blade, which is both a mark of the heat treat and a one-of-a-kind pattern.

The handle is box elder burl, dyed twice to bring out deep reds, oranges, and teals in the swirling grain. Burl grain is unpredictable, so no other knife will have this handle.

At 6" of blade and 10.5" overall, it's a nimble size for everyday prep, from slicing and dicing to trimming and herbs.
